Pancakes are out to conquer the world, but not the flat kind that anyone can make. The latest trend comes from Japan, where they are traditionally tall, soufflé-like and eaten with either savory or sweet toppings. It all started with a franchise company from Osaka and soon, Gram Cafes were springing up around the country. Hong Kong, Thailand and the U.S. followed, and it’s just a matter of time before Europe does, too.
